Salads are my thing, I actually crave them. Crazy, I know. I love to experiment with different dressings, giving the same old classic salads a new depth of flavor. My favorite of the moment is Dill Vinaigrette.
I was totally impressed by these muffins and their sneaky healthiness. And the kids loved them…Mom Win! Usually pumpkin muffins are pack with sugar and have a base of white flour, these muffins much different. I am always looking for ways to get veggies into the kiddos since they oppose them at all costs.
The summer is packed with fresh fruit and sometimes we get so excited we buy too much! At least I do…between pick your own fruit fun for the little ones and all the great local produce at the local farms fruit in the summer is on over load! One of our favorite recipes to make with our excess fruit is jam!
Were you a 80s and 90s kid? Do you remember Hamburger Helper, it was a classic in my home growing up. And it was one of my favorites. Since then I have learned a ton about food, nutrition and being healthy. Experimenting with old classics and turning them into a healthy meal has become so fun for me and I love to share what I find. So this is my newest update on an old Classic Modern Day Healthy Helper.
There are all kinds of seasoning mixes in the store. And all different ways to season our food. I have found that many of the seasonings I love are made by companies that don’t use organic spices which for me is important. So I started glancing on the back of the spice mixtures and coming up with similar combinations of my own. One of which is this Basic Everyday Seasoning.
I am always searching for ways to spice up regular meals. For me during pregnancy eggs have been a staple for breakfast or lunch. They can get really boring sometimes, especially when it becomes an everyday occurrence. I am also a huge fan of salsa. One day I was craving both! I thought hey why not combine the two!
Smoothies are a new fun experiment in our home. We have enjoyed basic smoothies for a while and have now began to experiment. I am also trying to get more veggies into the little guy! This is not a veggie packed Smoothie, however it is a nice treat packed with Nutrients and great for fighting those sugar cravings!
Breakfast is one of the most important meals. It can also be difficult to find something tasty and healthy that starts your day off right. Ever since finding out I was pregnant I have been trying to figure out a way to get veggies as often as possible. And of course to eat the Rainbow Daily. So I came up with my Eat the Rainbow Omelet!
I threw this together last night and I really enjoyed it so I wanted to share. We had some plain noodles left in the fridge and some fresh bell peppers, I chose to experiment!
- Chop up about ½ cup Red and Yellow Bell Peppers, ¼ cup of Onion ( I used red Onion)
- Turn the stove to medium, throw some Olive Oil and Italian Herb Infused Olive Oil in the pan. Just covering the bottom of the pan. Then throw peppers and onions in pan. Sprinkle Sea Salt and Black Pepper on top. Let cook for about 5 minutes.
- Turn heat down slightly and add 2 cups Cooked Noodles (or grain of choice) to pan. Toss around mixing everything together.
- Sprinkle with roasted Red Pepper Flakes and a bit more Sea Salt and Black Pepper. Let cook for about 5-7 minutes stirring occasionally.
- Turn off heat and enjoy! It does have a little kick to it!
I made about 2 servings, this recipe covers that. To make a larger portion adjust ingredients accordingly.
What you will need:
About 2 cups of cooked Noodles
½ cup chopped Red and Yellow Bell Peppers
¼ cup chopped Onion
Italian Herb Infused Olive Oil
Roasted Red Pepper Flakes
